6th/7th gen motherboards vs 8th? Ease of setup etc.

Hey guys, I'm looking at making my first hackintosh build, and I'm really wanting to not run into 5000 problems, I've been googling motherboards for about the last hour, and it seems like I'm only finding recommendations for 8th gen (ie gigabyte 370 series motherboards) do the 6th and 7th gen motherboards work as well as the 8th gen ones? I am not needing to overclock anything etc, but I just can't seem to pick through the success stories to really narrow down the mobo.

I currently have an RX 560 I'd like to use as well as ram, SSD, psu etc. The last thing I'm waiting to choose is the motherboard, then I'll get the appropriate CPU. I am looking for an ITX mobo I can follow along with a guide. If none of those are terribly user friendly I don't completely mind switching to an mATX build (I don't mind connecting over Lan and not wifi since I'll fill up the PCI slot).

I'd like a reccomendation for a mobo ~$100 or less based on what I've written before if possible. I have no issues using a 6th or 7th gen cpu vs an 8th as I won't be going crazy on the machine. If there is an absolutely breeze itx/matx mobo I should use that is in the $150 range I'd definitely consider it if it saves much headache.
