Opencore learning - Is a "Dry Run" possible? Or do you need to be running on the build itself?

I'm trying to learn how to use Opencore, by going through the Desktop guide as thoroughly as i can. My build parts are 2 weeks away, so trying to use the time wisely.

In short, i have created by USB installer, downloaded all the recommended tools and Opencore itself. Ive gone through the Kexts section and created a Kexts folder in my EFI.

Im now at the "Getting started with ACPI" Section, here is where i am finding it a little tricky. I am trying to follow the guide, and in the SSDTs: Easy way, it explains how to use SSDTTime tool, to dump DSDT and create SSDTs based off that.

I ran SSDTTime and here i dont have 4 options like shown in the guide, but only 1-3 - There is NO Dump DSDT command option.

Am i right in thinking, that this section cannot be done as a dry run, and that i need to be using my target drive/firmware at this point?

If NOT then what would one recommend?

If possible id love to continue the Dry run as far as possible to get used to how it all runs.. any tips on how this can be done without the real kit, would be greatly appreciated.
