Can I use a new(ish) OSX with the 5950x and 1080ti for Logic Pro? (No gaming or GPU workload needed)

Hi!

First time poster, long time lurker. Got a question for you guys. I want to do a dual boot on my computer with OSX on its own dedicated SSD. Wondering if it will be possible to use this combination:

- Asus rog x570i

- 5950x

- Nvidia 1080ti

What I've got so far is that there are no support for this GPU with the newer OS. The question here is, will it boot at all? And if it does, will it work fine for basic tasks without the drivers for the GPU? Will it be OK for music production? I am hoping to use something like Catalina, big sur etc, as I would prefer not to use an old version of Logic Pro. No gaming or other tasks are done in OSX, so the bar is not that high- but, wouldn't want a headache using it either.
