How to update from Mojave to Big Sur?

A couple of years ago I made my first hackintosh using Clover.
I haven't updated the OS to newer version mainly for compatibility and fear that I will break stuff mid-projects.

Now I can finally update and I want to bring it up to date with big sur.
What would be the steps to (Safely) update the OS (aside from a backup of both system and EFI).
Do I need to update first to Catalina or can I do directly Big Sur?
