Plugged in and booted from Windows drive, now can't get back into Mojave

Hi all, I didn't want to keep bugging the guys on Discord so I'm posting here.

HW: 6700k, Z170x-UD5 TH, RX 580, NVME OSX drive

I had a previous Windows 10 install on a SATA SSD that i'd unplugged for a surprisingly easy and uneventful OC Mojave install. I then made the classic mistake of plugging my Win10 drive back in and booting into Windows. Windows now works but I can't boot back into my OSX drive. OC doesn't see it as an option, and I can't get into it from the BIOS either (back to OC, which doesn't see the drive, etc.).

So far, I've only tried changing out my Bootx64.efi in case the Windows bootloader changed it.

Any other ideas? Here are my my config.plist and EFI screenshot.
