Formatting a partition in Disk Utilities (OpenCore 0.7.0) leading to boot issues?

Hello! Might as well start this off by disclosing that I am completely new to hackintosh/macOS in general, so I am extremely unsure of what went wrong on my end.

I attempted an install of macOS Catalina using OpenCore 0.7.0 a few hours ago. I got into the installer without any problems (spent a very long time wrestling with settings and configs prior to this incident so I was happy that I got this far) but noticed that the unallocated space I had left to format into a partition recognized by macOS with Disk Utility was not being recognized at all. It would only show what had already been formatted (I have both Windows 10 and Ubuntu 20.04 installed already, along with a separate partition for files shared between OSes, which all showed up correctly)

I thought I could fix this issue myself by booting into Ubuntu 20.04 and using GParted to format a partition and labeling it "CATALINA" so that I would not get it confused with the others. I set it to be formatted as NTFS, thinking that I would just be able to re-format it anyway as GParted does not support partitions used by macOS. This is where things started to go wrong.

When I came back to the installer the partition did show up and I did proceed as planned, by selecting it and attempting to format it as APFS. However, after clicking the button to format I was given an error that I did not think to document or take note of at the time (probably should have but I freaked out a bit), and suddenly none of my partitions could be opened or recognized by the installer. I powered off my laptop and removed the USB in a moment of panic and powered it back on, only to be greeted by a "No Bootable Device" message from my BIOS.

I have an Ubuntu Live USB that I was able to boot from, and GParted is showing everything on the disc being in tact, with the partition that was labeled "CATALINA" no longer having that label and showing as "unknown".

Any and all help is appreciated as I am completely lost and cannot even think of where to start with fixing this. I can currently only boot from an Ubuntu 20.04 Live USB and do not have access to another machine with Windows 10. I can see my existing partitions and move files off of them if it is necessary to completely wipe the drive. I can also provide files/screenshots if needed!

Intel UHD Graphics 630 (+ unsupported NVIDIA GTX 1050 4GB)

16GB DDR4 Memory (2x 8GB sticks, different brands, can check if its relevant)

HGST TravelStar 7k1000 1TB HDD

can post more specs/info if it's relevant but this post is long enough as it is!

EDIT: As my machine was a dual-boot with Ubuntu and Windows 10 I was using GRUB2 as my bootloader. Problem could have stemmed from there but again I am 100% unsure and confused
