Install Mac OS Big Sur + W10 + Ubuntu without dedicated GPU ?

Hello,

I just bought a RX 6800 XT for my hackintosh (Hope it's a good choice !).
I will receive it in a few days.

While this time, is it possible to already install Mac OS Big Sur 11.4 , with disconnecting my RTX 2070S (My actual GPU) and connecting the screen on my CPU (i7-9500k) ?
Then i will install Windows 10 + Ubuntu for a triple boot.
After this, i will plug and connect my new graphic card when i got it.

Will it work ? Or should i wait my GPU to begin the installation ?
